  • 1/4 cup shredded coconut
  • 1 tsp chia seeds
  • 1/2 tsp lime zest

directions:

  1. half a fresh pineapple then cut and scoop out the fruit. place the pineapple chunks into a freezer safe bag or container and freeze for at least 6 hours until fully frozen. also freeze fresh mango and banana chunks.
  2. the next day, zest and juice 1 lime. keep the zest for garnish.
  3. to a blender add frozen pineapple, frozen mango, frozen banana, coconut water, lime juice, and simply tera’s organic lactose free whey protein powder.
  4. blend until smooth and has a frozen custard consistency.
  5. spoon the smoothie mixture into the hulled pineapple half, garnish with shredded coconut, chia seeds, and lime zest.
