- 1 cup shelled pistachios, divided
- 8 pitted Medjool dates
- 1 cup raw walnuts
- 2 scoops simply tera’s pure dark chocolate whey protein powder
- ½ tsp pure vanilla extract
- ¼ tsp kosher salt
- ½ cup dark chocolate
- 1 tsp Carrington Farms Organic Coconut Cooking Oil
directions:
- Preheat the oven to 350°F and toast pistachios on a baking sheet for about 5 minutes.
- Rehydrate dry dates in boiling water if needed. In a food processor, blend walnuts and 3/4 cup of pistachios into a meal.
- Set aside, then pulse the remaining pistachios into coarse pieces for topping.
- Process dates into a sticky paste, adding cocoa powder, vanilla, salt, and the ground nut mixture.
- Scoop and roll the mixture into balls and freeze for 10-15 minutes. Melt chocolate and coconut oil in the microwave, then dip truffles into the chocolate and top with crushed pistachios. Let set and enjoy!
