ingredients:
for the herb cheddar waffles:
- 2 cups Carrington Farms Gluten Free Flour with Fiber
- 2 scoops simply tera’s organic whey protein, plain unsweetened
- 2 tbsp baking powder
- 1 tsp baking soda
- ½ tsp kosher salt
- ½ tsp freshly ground pepper
- 2 large eggs room temperature
- 1 ½ cups light cream
- 2 tbsp Carrington Farms Organic Coconut Cooking Oil
- 1 ½ cups sharp cheddar cheese grated
- Carrington Farms Ghee Spray, to coat the waffle pan
for the maple-infused cream sauce:
- 1 cup light cream
- 2 tbsp maple syrup or maple sugar
- Salt and pepper to taste
- ¼ cup water mixed with 1 tbsp cornstarch
to serve:
- 4 eggs, fried
- 1 avocado, thinly sliced
- ½ pound thick-cut bacon, cooked in the oven
directions:
- preheat the oven to 350 F and place bacon on a non-stick baking tray. bake for 12-15 minutes, depending on thickness of bacon, until crispy.
- while bacon cooks, mix all of the waffle ingredients together until well incorporated. preheat the waffle iron.
- in a small saucepan, simmer the light cream and seasonings. once slowly simmering, add the water and cornstarch mixture, whisking quickly. reduce heat to low and keep warm for serving.
- to serve, make waffles as usual. fry eggs and top waffles with fried egg, cooked bacon, sliced avocado, and drizzle maple cream sauce over everything. add an extra touch of black pepper or micro greens for color and flavor, and some red pepper chili flakes for heat (optional).
- serve immediately and enjoy!
