- ¼ cup simply tera’s organic whey protein, bourbon vanilla
- 2 cups Carrington Farms Organic Coconut Flour
- ¾ cup Carrington Farms Organic Coconut Cooking Oil
- 1 ½ tsp baking powder
- ¼ tsp salt
- 2 eggs
- 1 cup buttermilk
- 1 ½ cups sugar
- ¼ cup cocoa powder
- 1 cup Carrington Farms Beet Root Powder
- 1 tsp vanilla
for the frosting
- ¼ cup simply tera’s organic whey protein, bourbon vanilla
- ½ cup Carrington Farms Beet Root Powder
- 1 ½ cup butter
- 8 oz cream cheese
- 5 cups powdered sugar
directions:
for the cupcake
- in a stand mixer combine Carrington Farms Organic Coconut Cooking Oil, eggs, sugar, Carrington Farms Beet Root Powder, vanilla, and buttermilk on speed 5 for about 2 minutes until smooth and creamy. set wet ingredients aside.
- in a separate bowl, add Carrington Farms Organic Coconut Flour, baking powder, salt, simply tera’s organic bourbon vanilla whey protein powder, and cocoa powder. fold ½ of the dry ingredients mixture into the wet ingredients for 1 minute. repeat a second time until all ingredients are well combined.
- place batter in your cupcake liners, filling them to the top (leaving about ¼ inch at the top).
- bake cupcakes at 350°f for 20-25 minutes or until the centers come out dry.
- set aside the cupcakes to cool at room temperature for 20 minutes.
for the frosting
- in a stand mixer whisk butter and cream cheese together on speed 7 for about 2 minutes until soft and airy.
- add in powdered sugar and mix on speed 3 for about 3 minutes until combined and soft.
