  1. in a stand mixer combine Carrington Farms Organic Coconut Cooking Oil, eggs, sugar, Carrington Farms Beet Root Powder, vanilla, and buttermilk on speed 5 for about 2 minutes until smooth and creamy. set wet ingredients aside. 
  2. in a separate bowl, add Carrington Farms Organic Coconut Flour, baking powder, salt, simply tera’s organic bourbon vanilla whey protein powder, and cocoa powder. fold ½ of the dry ingredients mixture into the wet ingredients for 1 minute. repeat a second time until all ingredients are well combined.  
  3. place batter in your cupcake liners, filling them to the top (leaving about ¼ inch at the top).
  4. bake cupcakes at 350°f for 20-25 minutes or until the centers come out dry.
  5. set aside the cupcakes to cool at room temperature for 20 minutes.

for the frosting

  1. in a stand mixer whisk butter and cream cheese together on speed 7 for about 2 minutes until soft and airy.
  2. add in powdered sugar and mix on speed 3 for about 3 minutes until combined and soft.
