Ingredients:
For the chia seed granola:
- 3/4 cup rolled oats
- 1/2 cup chopped almonds
- 1/4 cup chopped walnuts
- 3 tbsp Carrington Farms Organic Chia Seeds
- 1/2 tsp ground cinnamon
- 1/2 tsp kosher salt
- 1/4 tsp ground cardamom
- 1/4 cup Carrington Farms Organic Coconut Cooking Oil
- 1/4 cup maple syrup
- 1/2 tsp vanilla extract
For the macerated berries:
- 1/2 cup strawberries, quartered
- 1/2 cup blueberries
- 1/2 cup raspberries
- 1 tsp granulated sugar
- 1 tbsp orange juice
For the protein yogurt:
- 2 cups plain yogurt
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- 1/4 tsp ground cinnamon
- 2 scoops simply tera’s pure whey protein, plain
Directions:
- Preheat the oven to 325° F and line a rimmed baking sheet with parchment paper.
- Make the granola: In a large bowl, stir together oats, almonds, walnuts, chia seeds, cinnamon, salt, and cardamom. In another bowl, whisk together coconut cooking oil, maple syrup, and vanilla until smooth. Add the wet ingredients to the bowl with the dry ingredients and stir until everything is well-coated. Spread the granola in an even layer on the baking sheet and bake for 20-25 minutes, stirring about halfway through the baking time. Let cool completely before stirring again.
- While the granola is cooling, stir together the fruit, sugar, and orange juice. Let rest while you prepare the rest of the parfaits.
- In a large bowl, combine the yogurt, maple syrup, vanilla extract, cinnamon, and whey powder. Whisk until smooth.
- In small jars or glasses, layer yogurt with berries and cooled granola.
