ingredients:
- 2 1/2 cups unsweetened vanilla almond milk
- 1 cup strong brewed coffee or espresso
- 2 scoops simply tera’s pure whey protein, dark chocolate
- 2 tbsp dutch cocoa
- 1/2 tsp peppermint extract (adjust to taste)
- 1 can whipped cream for topping
- crushed candy canes and melted chocolate for topping (optional)
directions:
- add almond milk, simply tera’s pure dark chocolate whey protein, and dutch cocoa to a large blender. blend on speed 3 for 2 minutes until smooth.
- add brewed coffee and peppermint extract to a medium pot. stir over medium heat for about 3 minutes until you smell a strong aroma of peppermint.
- slowly stir in the blended protein mixture to the pot for an additional 5 minutes until smooth. cover and let the mixture simmer on low heat until hot, but do not allow it to boil.
- pour the peppermint mocha mixture into two 16-oz serving glasses. top with whipped cream and crushed candy canes if desired and serve!
