ingredients:
for the filling
- 3 oz firm tofu
- 1 scoop simply tera’s organic whey protein, plain unsweetened
- a pinch of black salt
- a pinch of turmeric for color
- 1 green scallion, thinly sliced
- 1 heaped tbsp thick yogurt (ie Greek, Skyr)
- 1 tsp sriracha
- 1 tsp dijon mustard
- black pepper and salt to taste
to assemble
- 1 whole wheat pita, or other bread of choice (bread, english muffins, etc)
- 1 tomato, sliced
- fresh spinach
- ½ small avocado
directions:
- using a fork, smash and mix tofu with black salt and turmeric until desired consistency is reached.
- then add yogurt, simply tera’s plain unsweetened whey protein powder, sliced scallion, sriracha, mustard, lots of black pepper and a pinch of salt. taste and add more of any ingredient if you like.
- toast the pita lightly, cut open with a pair of scissors and add a little spinach, a sliced tomato, some avocado and the egg salad mix and enjoy!
