eggocado breakfast sandwich




for the filling

to assemble

  • 1 whole wheat pita, or other bread of choice (bread, english muffins, etc)
  • 1 tomato, sliced
  • fresh spinach
  • ½ small avocado


  1. using a fork, smash and mix tofu with black salt and turmeric until desired consistency is reached. 
  2. then add yogurt, simply tera’s plain unsweetened whey protein powder, sliced scallion, sriracha, mustard, lots of black pepper and a pinch of salt. taste and add more of any ingredient if you like.
  3. toast the pita lightly, cut open with a pair of scissors and add a little spinach, a sliced tomato, some avocado and the egg salad mix and enjoy!
