for the apple filling:
- 6 medium apples (granny smith or honeycrisp work well), peeled, cored, and sliced thinly
- 2 tbsp maple syrup
- 1 tbsp lemon juice
- 1 tbsp Carrington Farms Xanthan Gum
- 1 1/4 tsp allspice
- 1/2 tsp cinnamon
- 1/4 tsp salt
- for the crisp topping:
- 1 cup almond flour
- 1 cup gluten-free rolled oats
- 1/2 cup chopped pecans
- 2 scoops simply tera’s organic bourbon vanilla whey protein powder
- 1/4 cup Carrington Farms Organic Coconut Cooking Oil or Organic Coconut Oil (melted)
- 1/4 cup maple syrup
- 1 tsp cinnamon
- pinch of salt
1. preheat your oven to 350°f (175°c). grease a baking dish (8x8 or similar size) with a little coconut oil or non-stick spray.
2. in a large mixing bowl, combine the sliced apples, maple syrup, lemon juice, carrington farms xanthan gum (or cornstarch), cinnamon, nutmeg, and salt. stir until the apples are well-coated and the ingredients are evenly mixed.
3. spread the apple filling evenly into the prepared baking dish, making sure it’s evenly distributed.
4. in another bowl, mix the almond flour, rolled oats, chopped pecans, simply tera’s organic bourbon vanilla whey protein powder, carrington farms liquid or melted coconut oil, maple syrup, cinnamon, and a pinch of salt. stir until the mixture is well-combined and crumbly.
5. top the apples with crisp topping: sprinkle the crisp topping evenly over the apples, covering the entire surface.
6. place the baking dish in the preheated oven and bake for 35-40 minutes or until the topping is golden brown and the apples are tender.
7. remove from the oven and let cool slightly. serve warm, and if desired, pair it with vanilla ice cream or a dollop of whipped cream.
