Ingredients
For the Waffles:
- 2 ½ C 1 to 1 Gluten Free Flour
- 1 TBSP Baking Powder
- ½ tsp Salt
- 3 TBSP Brown Sugar
- 1 TBSP Cinnamon
- 2 Lg Eggs, separated
- ½ C Vegetable Oil
- 2 C Whole Milk
- 2 tsp Pure Vanilla Extract
- 2 scoops simply tera's organic bourbon vanilla whey protein
For the Cream Cheese Whipped Cream:
- 2 TBSP Cream Cheese, softened
- 2 TBSP Sugar
- ½ C Heavy Whipping Cream, cold
- Optional - Cinnamon Sugar for topping
Instructions
For the Waffles:
- In a large bowl, whisk the flour, baking powder, salt, brown sugar, protein powder, and cinnamon. Set aside.
- Add the egg whites to a medium bowl and whip with a hand mixer until soft peaks form, about 3 minutes.
- In a large measuring cup, add the eggs, milk, oil, and vanilla. Mix to combine.
- Make a well in the center of the dry ingredients and pour in the milk mixture. Use a rubber spatula to incorporate. Some lumps in the batter are fine!
- Fold in the egg whites until combined.
- Heat your waffle maker and spray with nonstick. Pour in the batter and cook until golden.
For the Cream Cheese Whipped Cream:
- Add the cream cheese and sugar to a medium bowl. Whip with a hand mixer until light and fluffy.
- Add the heavy cream and continue to whip until soft peaks form.
- Dollop onto waffles and sprinkle with cinnamon sugar.
- Drizzle with maple syrup and enjoy.
