pumpkin spice latte smoothie bowl

ingredients: 

  • 2/3 cup pumpkin puree
  • 1/2 cup coconut milk
  • 1/2 cup greek yogurt
  • 2 bananas, quartered and frozen
  • 2 medjool dates
  • 2 scoops simply tera’s lactose free organic whey protein, bourbon vanilla
  • 2 tsp of Highground Organic Regular Instant Coffee & 1 cup hot water, frozen into 6 coffee cubes
  • 1/2 tsp cinnamon
  • 1/2 tsp ginger
  • fresh ground nutmeg

directions:

  1. peel 2 bananas, cut them into quarters and place into the freezer to freeze overnight.
  2. combine 1 cup of hot water with 2 tsp of Highground Organic Regular Instant Coffee and set aside for 10 minutes to cool. pour coffee mixture into an ice cube tray and place into the freezer to freeze overnight. 
  3. add pumpkin, coconut milk, yogurt, simply tera’s organic lactose free bourbon vanilla whey protein powder, and medjool dates to a blender. blend on speed 5 for about 90 seconds until the dates are pureed. 
  4. add bananas, coffee cubes, cinnamon, ginger, and nutmeg. blend on speed 5 for an additional 60 seconds until it reaches a creamy consistency.
  5. add creamy mixture to a bowl, and top with granola, pumpkin seeds, pistachios, or any other desired toppings. enjoy immediately!
