Spinach + Ricotta Protein Calzone

Ingredient List
  • 3/4 cup, 2 tablespoons water
  • 1 package active dry yeast (or 2 grams)
  • 3 cups all-purpose flour
  • 1/4 teaspoon salt
  • 4 scoops tera'swhey plain protein powder
  • 10 ounces fresh spinach
  • 16 ounces Ricotta cheese
  • 1 cup mozzarella cheese
  • 1/2 cup parmesan cheese
  • 8 ounces tomato sauce (16 ounces total for dipping sauce)
  • pinch of salt and pepper
Cooking Instructions
  1. Add warm water to mixing bowl.
  2. Add yeast. Set aside for 5 minutes.
  3. Mix well with a wisk or fork.
  4. Add flour, salt and whey protein powder. Stir well.
  5. Let the dough rise for 20 minutes (or wrap in plastic wrap and store in the refrigerator overnight.)
  6. Separate into 8 pieces and roll out into flat, circular layers. Set aside.
  7. Dice spinach and place into a large mixing bowl.
  8. Add ricotta, parmesan and mozzarella cheese. Mix well.
  9. (optional) Add one tablespoon tomato sauce to the middle of the dough circle.
  10. Place two large tablespoons of spinach and ricotta mixture on in the middle of the dough.
  11. Sprinkle with a pinch of salt and pepper.
  12. Pull one half of the dough over the other side until the edges are aligned.
  13. Press the two sides of dough together with your fingertips.
  14. Once the sides are pressed together, carefully fold the dough over on itself to make a crust.
  15. Brush an egg white over the dough before placing it in the oven.
  16. Grease pan and bake at 350 degrees for 25 minutes, or until golden brown.
  17. Remove and let cool for a minimum of 5 minutes before eating.
  18. Serve immediately or store in an airtight container in the refrigerator.
