The Scoop 102: How to Make Quality Whey Protein Isolate

In the previous blog in this series, The Scoop: tera’swhey® Protein Process 101, we described our whey protein process: how we source high quality ingredients for our whey protein powders, extract our whey protein through cold processing, and blend it with organic ingredients.

As mentioned in The Scoop 101, Whey Protein Isolate (WPI) contains roughly 90% whey protein content, which is considered an isolate-level of protein purity.

We’re one of few facilities in the nation capable of producing WPI, but what makes us even more unique is the way we produce it.

Protein quality is our highest priority during the protein extraction process for both our Whey Protein Concentrate (WPC) (discussed in The Scoop 101) and Whey Protein Isolate. We take pride in producing clean, non-denatured protein.

The reason quality takes priority is because proteins in whey are composed of useful subunits that can be harmfully broken down, through a process called denaturation, when exposed to acidic or high-temperature environments.

Have you ever been told to avoid WPI because of over processing? The truth is: Not all WPI is created equal. With WPI, it’s the method of production that matters. If you want an extra high-protein supplement, tera’s® WPI is non-denatured, just the same as our WPC.

There are two ways to produce WPI. One causes denaturation, while the other does not.

The first method is called Acid Ion Exchange, which produces a higher protein yield at a lower cost. The Acid Ion Exchange method uses chemicals, which cause denaturation of the protein subunits. This denaturation restricts the bioavailability of the whey protein. That is, it reduces the proportion of useful protein subunits available for your body to use. This leaves a less beneficial protein supplement for your body, even if the quantity of protein may appear high. This is not the type of processing that is used for tera’s® WPI.

Instead, we use a technique called microfiltration. This cold processing technique produces WPI without the use of chemicals that cause denaturation; we use an additional set of filters and cool water instead. Microfiltration separates the fat from the WPI, and allows for higher protein concentration. This technique produces a slightly lower yield of WPI, but the quality of protein remains.
