Tera’s pumpkin spice cookies

A cool breeze fills the air and pumpkin spice fills….well, pretty much everything. This fall we’re not wasting any time baking with our favorite, pumpkin spice! This sweet (protein packed) cookie will be one of your favorites this season.

All you need is 4 (medium, ripe) bananas, 3 scoops tera’swhey bourbon vanilla protein powder, 2 cups oats, 1/2 cup raisins, 1/2 cup white chocolate chips, 1/4 teaspoon nutmeg, 1 teaspoon cinnamon and of course: 1/4 teaspoon pumpkin spice!

Step 1: Mash Bananas

To mash the bananas, use a fork (or potato masher) and gently press the banana against the bowl.

If you like banana chunks in your cookies, leave some larger chunks, otherwise, mash until completely chunk-free.

Step 2: Combine Dry Ingredients

Add the whey protein, oats, cinnamon, nutmeg and pumpkin spice to the bowl.

Stir until all of the powder, spices and oats are mixed into the mashed bananas.

Step 3: Fold in Raisins + White Chocolate Chips

Add raisins and white chocolate chips to the bowl.

Gently fold the raisins and white chocolate chips into the mixture.

Step 4: Lightly Grease + Place on Baking Sheet

Lightly grease the baking sheet so the cookies don’t stick to the pan.

Using a tablespoon as a measurement,

scoop out one cookie at a time until the baking sheet is filled.

Bake for 9-10 minutes at 400 degrees.

Step 5: Cool + Store

Remove from the baking sheet and let cool on wire until completely cold.

Store in an airtight container in the refrigerator.

Try not to eat them all at once!
