National [N]ice Cream Sandwich Day

Three cheers for National Ice Cream Sandwich Day! At tera’s® we LOVE all things nice cream, so we figured, why not make some delicious nice cream into an equally delicious nice cream sandwich? Here’s how we made them:

Avocado Chocolate Cookies

25 minutes

(6 sandwiches)





  • 1avocado
  • ½ cup sugar
  • 1 egg
  • ½ cup flour
  • ½ cup cocoa powder
  • 1 scoop tera’swhey chocolate protein powder
  • ½ cup chocolate chips (dark)


  • Combine avocado flesh, sugar and egg. Mix on medium speed for 1-2 minutes.
  • Add flour, cocoa powder and chocolate whey protein. Mix well.
  • Stir in chocolate chips.
  • Scoop batter onto parchment paper with large serving spoons (dough does not rise or expand, so make them desired size before baking).
  • Bake at 375° for 10-11 minutes.

Homemade Peanut Butter Cups

30 minutes

12 Peanut Butter Cups


  • ¼ cup peanut butter
  • 1 scoop tera’swhey chocolate protein powder
  • 1 cup dark chocolate chips
  • 1 tablespoon coconut oil


  • Line mini muffin pans with parchment paper, spray with coconut oil.
  • Combine chocolate protein powder and peanut butter. Mix well.
  • Combine coconut oil with chocolate chips and melt in microwave (or stovetop) until smooth.
  • Pour chocolate into mini muffin liners (fill about ¼ full).
  • Store in freezer for 10-15 minutes (or until chocolate hardens).
  • Scoop 1 tablespoon of peanut butter mixture on top of the chocolate in each muffin tin.
  • Pat the peanut butter down so it spreads over the entire portion of the frozen chocolate.
  • Pour 2 tablespoons chocolate over the peanut butter and store in the freezer for 10-15 minutes (or until chocolate is solid).
  • Eat immediately or store in refrigerator.

Banana Peanut Butter Cup Nice Cream

10 minutes

6+ servings (6 sandwiches)


  • 2 cups frozen banana slices (about 2 large, ripe bananas)
  • 2 tsp vanilla extract
  • 4-6 Homemade Peanut Butter Cups


  • Slice two large, ripe bananas into coins. Add as single layer to gallon Ziploc freezer bag, and freeze overnight.
  • Remove from freezer, let banana coins thaw for 2-3 minutes, then place in a food processor with vanilla extract.
  • Blend for 30 seconds at a time, scraping the sides with a spatula in between, for about two minutes total, or until the mixture is a creamy consistency.
  • Slice 4-6 Homemade Peanut Butter Cups, then add to the food processor and pulse until Peanut Butter Cups are crushed.

To assemble sandwich: Add 1/6th of the nice cream between two cookies-and voila! Your decadent masterpiece is complete! Enjoy immediately or store in the freezer in individual freezer bags. But we’ll be honest, ours didn’t make it that far!
