The Celiac Disease Foundation (CDF) is a non-profit organization driving the diagnosis, treatment and a cure for celiac disease. The CDF defines celiac disease as,
“An autoimmune disorder that can occur in genetically predisposed people where the ingestion of gluten leads to damage in the small intestine. “
The symptoms can be difficult to diagnose since the disease affects everyone differently. Some people have digestive symptoms, while others have no symptoms at all. There are long-term complications of the disease, whether the patient has symptoms or not.
