Winter has melted away and spring has sprung! With the arrival of new seasons comes the sprouting of new fruit and veggies worth scooping up at a local farmer’s market or grocery store. From artichokes to honeydew, get the scoop on these springtime favorites:

Artichokes

At first glance, artichokes might appear intimidating to cook with—but hidden within its green petals are healthful antioxidants. This veggie truly deserves the title “superfood” as a study has shown it has more antioxidants than blueberries or dark chocolate which are more commonly associated with high levels of antioxidants.

Apricots

This delicious yellowish-orange fruit offers your body high levels of Vitamin A and Vitamin C. Vitamin A helps maintain eyes, skin and your immune system, while Vitamin C is known for its antioxidant properties, provides protection against free radicals.

Honeydew

Sweet honeydew melons aren’t just a refreshing, hydrating fruit to snack on this spring, but they also provide Vitamin C and potassium to your body. With levels of potassium similar to a banana, potassium acts as an electrolyte to regulate fluid balance and a healthy blood pressure.

Watercress

Similar to spinach, this leafy green ideal is known for its nutritious nature. Vitamin K is the most prominent nutrient present in watercress and aids in strengthening bones, blood clotting and preventing heart disease. The versatility of watercress matched by its health benefits makes this green a salad essential.

Fennel

With an appearance similar to dill, fennel adds the perfect “crunch” as well as fiber to any salad.
